Wild Garlic New Potatoes
Quick and easy... a great accompaniment to spring barbecues. loosely based on pesto but milder Serves 4.
Ingredients
New potatoes
a small bunch of wild garlic, try to pick the tender young leaves
50g pine nuts
3 tbls good quality extra virgin olive oil
salt
a small handful of grated cheese (chedder or parmesan)
a knob of butter (leave out if you want to be healthy)
Method
Boil the potatoes until tender. In a pestle and mortar pound the pine nuts, some salt (depending on taste) and some olive oil. Finely chop the wild garlic leaves and add to the mix. Once it's well pounded add the rest of the olive oil, greated chees and butter, mix up and stir into the potatoes.
This recipe works very well with basil too, but you need to add a garlic clove at the start. it also works well as a vegan dish if you omit the cheese and butter.
