Rabbit and Leek Pasta
Delicious and easy to make, creamy, cheesy pasta for a weekday family meal. Serves 4.
Ingredients
Meat from 2 rabbits
2 leeks
Clove of Garlic
A glug of white wine
1 tub Creme fraishe
A large handful of grated cheese
Enough pasta for 4 people
Fresh ground black pepper
Method
Cut the rabbit meat into small strips and start cooking in a pan with a little oil. Once browned a little add the leeks and cover so they soften. Add a splash of white wine and the garlic. Once the rabbit is nearly cooked through and the leeks are softened start cooking the pasta. When there is just a few minutes left on the pasta add the creme fraishe and cheese and stir until melted.
Drain the pasta, mix with the sauce and serve with black pepper to taste.
