Chicken liver with bread and butter
This is a delicious snack to have while your clearing up after the plucking and gutting stage. I am not a huge fan of liver generally but like this it is one of my favourite things and has been since I was a child when my mother used to make it for us to ensure we got a taste for liver. It's great for kids because it isn't a very strong flavour and you are not presenting them with a great slab of liver, which can be off putting.
Ingredients
chicken livers
flour, seasoned with salt and pepper
a little oil for frying
bread and butter
a couple of table spoons of water
Method
Chop the chicken livers into bite size pieces, coat in the seasoned flour and fry in a little oil for just a few minutes, they don't take long. Take them out of the pan and add the water to the hot pan, stir to make a tiny amount of thick gravy sauce. Pour over the liver pieces and serve with bread and butter.
