Chicken Kiev
Good old chicken kiev... very hard to find a free range ready made one, so make your own!
Ingredients
2 Chicken breasts
1 or 2 garlic cloves (depending on personal taste), crushed or chopped
1 tbsp natural fromage frais or crème fraiche (or if you want to be really unhealthy you could just use butter)
1 tbsp freshly chopped parsley
salt and pepper
4 tbsp grated parmesan cheese
1 small egg, beaten
breadcrumbs
olive oil
Method
Pre heat the oven to gas mark 5 (190°C/375°F). With a sharp knife slice into the chicken breast lengthways, but not all the way through, to form a 'pocket'. In a bowl, mix together the crushed garlic, parsley, half the parmesan and the crème fraish/fromage frais and season it. Spoon the mixture into the cavity and press the edge back together gently to seal, you can secure the opening with a cocktail stick, but it's not entirely necessary. Brush the bottom of the chicken breast with some egg and sprinkle with breadcrumbs. Place in a baking tray and then coat the top with eggs and breadcrumbs and sprinkle with the remaining parmesan. Drizzle a tiny bit of olive oil, or spray if you have oil in a spray, over them and bake for 25-30 mins until golden and cooked through. Serve with lemon wedges and salad, colesaw, chips, veg or whatever you like.
